No bake Coconut bars (known as Bounty Bars, depending on where you live) are classic chocolate bars that we all know and love. It is not only the taste that we like but also the fact that it’s such an easy treat to make. The no bake coconut bars coconut base contains condensed milk and shredded coconut which altogether make for a delicious flavour combination. The chocolate topping can be left as is or even replaced with any other nut butter if preferred. Great as a snack or dessert this recipe has now become one of my favourite go-to recipes since it is so quick and easy to whip up whenever I am craving something sweet after dinner!
Ingredients to make No bake Coconut Bars
1 cup white sugar 1/2 teaspoon salt 3 tablespoons cocoa powder 1 cup hot water 1 cup sweetened, shredded coconut
1/4 cup (half stick) unsalted butter, softened
2 cups confectioners’ sugar 3 tablespoons milk or cream 1 teaspoon vanilla extract 8 ounces chocolate chips (semi-sweet)
Directions to Make No bake Coconut Bars
In a medium saucepan add the white sugar, salt and cocoa powder. Stir in hot water until the mixture is smooth. Bring to a boil over medium heat, stirring occasionally. Boil 1 minute longer. Remove from heat; stir in coconut and butter until combined. Press mixture evenly onto bottom of 13x9x2 inch metal baking pan using waxed paper coated with nonstick spray as your aid. Cool completely. In a small bowl combine confectioners’ sugar, milk and vanilla; beat with a spoon until smooth. Spread over the cooled coconut base. Sprinkle chocolate chips evenly over top; gently press down to adhere. Refrigerate 30 minutes or until chocolate is firm enough to cut. For clean cuts, dip the blade of a sharp knife in hot water before cutting each bar into 16 pieces.
Take your first piece of fudge out of the fridge/freezer, remove the waxed paper carefully off the top so it doesn’t break up your coconut layer too much, then cut into 8 even bars (or triangles if you’re fancy). Leave at room temperature for about 5-10 minutes before enjoying!

You can also add some extra ingredients such as cocoa powder (1 teaspoon), dark chocolate (50 g), Mint Crisp biscuits (200 g) or even peanuts to give your bars a crunchy touch.
To prepare the recipe all you have to do is place everything together in a saucepan on a gentle heat until the mixture becomes thick and brownish then transfer it onto baking paper that has been covered with greaseproof paper. Leave it to cool and when it has cooled down, cut the mixture into medium squares. The coconut bars can be stored in an airtight container for a couple of weeks.
