Pineapple Sunshine Cake

For the Cake:

  • – 1 box yellow cake mix
  • – 4 large eggs
  • – 1/2 cup vegetable oil
  • – 1 can crushed pineapple with juice


  • – 1 container whipped topping
  • – 1 small box of instant vanilla pudding
  • – 1 can crushed pineapple with juice


Preheat the oven to 350 degrees, grease a 9×13 baking pan with cooking spray or oil. Take a large bowl, add cake mix, eggs, oil, and 1 can of crushed pineapple with the juice, combine them until eggs are blended well. Place on the prepared baking tray and bake for 25-30 minutes, make sure the toothpick in the center of the cake comes out clean; cool completely on a metal rack. Now take a medium-sized bowl, combine whipped topping, a box of vanilla pudding and 1 can of crushed pineapple with the juice; Spread over the top of the cake, refrigerate, or serve immediately.

Homemade Banana Pudding


  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 3 cups low fat or whole milk
  • 3 large egg yolks
  • 3 tbsp butter
  • 2 tsp vanilla
  • 1 box vanilla wafer cookies
  • 3 to 4 ripe bananas
  • 2 cups sweetened whipped cream
  • Garnish: 1 banana (sliced)
  • Garnish: 1 mint sprig


Take a medium-size bowl, combine the sugar, salt, and flour mix until a good blend. Slowly add the milk and stir until smooth; Then pour into a double boiler over simmering water, cook it, whisk frequently until the mixture begins to thicken. Take a small bowl, whisk the egg yolks, whisk in about 1 cup of the slightly thickened hot milk mixture. Put egg mixture into the double boiler, add the vanilla and butter, whisking continuously, cook until well thickened; Remove from heat and let sit aside to cool slightly.

In a tall dessert glass or a 2-quart serving dish, create a layer of vanilla wafers with sliced banana on top, pour some of the pudding over it then layer more vanilla wafers and banana slices, top again with more pudding. Serve with the whipped cream topping, garnish with a few slices of banana, and a mint sprig.

Strawberry Cream Parfaits


  • 1-pound frozen unsweetened strawberries, thawed
  • 2 tbsp sour cream
  • 1 scant cup chilled heavy whipping cream
  • Eight 2-inch vanilla meringue cookies, coarsely broken


Take a medium bowl, mash the berries with a fork into a chunky sauce. In another bowl place the sour cream, add enough chilled heavy cream, beat together until thick and stiff, fold in the broken meringues. Divide the berries in half and put into 4 serving bowls, add cream mixture on top, repeat layers with remaining berries and cream mixture, top each bowl with meringue, refrigerate for an hour and serve.
